Basmati Rice with Vegetables in a Pan

Ingredients
  • 1 onion
  • half a leek
  • 3 cloves of garlic
  • 2 large mushrooms
  • 1 carrot
  • 1 zucchini
  • half a head of broccoli
  • 100 g smoked tofu
  • 5-6 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp turmeric
  • 1 cup basmati rice
  • 2 cups water
  • 1/2 bunch fresh dill
Preparation
  1. Chop all the vegetables and tofu finely and sauté in olive oil until semi-cooked. Use a deep pan.
  2. Add salt, turmeric, and stir.
  3. Add rice along with water and cook covered for about 10 minutes.
  4. Sprinkle with freshly chopped dill.
