Ingredients
  • cooked octopus – 600 g
  • potatoes – 400 g
  • cherry tomatoes – 200 g
  • red onion – 1/2 pc
  • olives – 100 g
  • olive oil – 4 tbsp
  • lemon juice – 2 tbsp
  • garlic – 2 cloves
  • salt – 1 tsp
  • black pepper – 1/2 tsp
  • parsley – 1/2 bunch
Preparation
  1. If the octopus is not cooked, boil it for about 40–60 minutes until tender, then slice it.
  2. Boil the potatoes, peel them, and cut into cubes.
  3. Chop the tomatoes, onion, and olives.
  4. In a large bowl, mix the octopus, potatoes, and vegetables.
  5. In a small bowl, mix the olive oil, lemon juice, and finely chopped garlic.
  6. Drizzle the salad with the dressing.
  7. Season with salt and pepper, sprinkle with parsley, and toss gently before serving.
