Lenten Cabbage Rolls with Raisins for Christmas Eve

Ingredients
  • 1 medium pickled cabbage
  • 80 ml oil
  • 2 tbsp lard
  • 1 onion
  • 1 leek
  • 2 tsp paprika
  • salt to taste
  • 1 cup rice
  • 1 handful of raisins
Preparation
  1. Separate leaves from a medium pickled cabbage.
  2. Heat oil in a pot and sauté the chopped leek and onion with a pinch of salt and black pepper until softened.
  3. Add washed rice, stir, and fry until it becomes glassy for 1-2 minutes.
  4. Add paprika, stir, and pour in hot water, mixing until it boils and the rice slightly swells and absorbs the liquid.
  5. Remove from heat and mix in a handful of raisins.
  6. Place a spoonful of filling on each cabbage leaf and roll into a sarma.
  7. Arrange a layer of rolls, top with pieces of lard and sprinkle with a teaspoon of paprika. Add another layer of rolls, more lard, and paprika. Pour water to cover the rolls, and cover with a plate.
  8. Cook on low heat until done, about 50-60 minutes.
