Tofu Ratatouille with Brown Rice

Ingredients
  • 200 g Tofu
  • 150 g Zucchini
  • 150 g Eggplant
  • 150 g Bell Pepper
  • 100 g Tomatoes
  • 1 tbsp Olive Oil
  • 1 tsp Garlic
  • chopped
  • 200 g Brown Rice
  • 400 ml Vegetable Broth
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Thyme
Preparation
  1. Cook rice in vegetable broth.
  2. Cube tofu and sauté in olive oil.
  3. Chop vegetables and add to tofu.
  4. Add garlic, salt, pepper, and thyme.
  5. Sauté vegetables until soft.
  6. Serve rice and top with ratatouille.
