2 tbsp olive oil

200 ml tomato sauce

100 g cheese

1/2 tsp salt

1/2 tsp black pepper
Preparation
Dice the zucchini, eggplant, bell pepper, and onion into small cubes.
Heat the olive oil and sauté the onion for 2–3 minutes.
Add the remaining vegetables and cook until softened.
Stir in the tomatoes, tomato sauce, and seasonings.
Let the mixture simmer for 10–15 minutes.
Layer lasagna sheets and vegetable mixture in a baking dish.
Sprinkle grated cheese on top and bake in a preheated oven at 180°C for about 30–35 minutes.
