Place the meat in a pot with cold water and bring to a boil, skimming off the foam.
Season with salt and add chopped onion, carrot, and celery.
Cook over medium heat for about 50 minutes, then add diced potatoes.
After 20 minutes, add peeled and coarsely chopped tomatoes, bay leaf, and black pepper.
After another 10-15 minutes, remove from heat, take out the meat, remove bones, and cut into pieces before returning it to the pot. Serve with finely chopped parsley.
