Bean Patties

Ingredients
  • 250 g white beans
  • 2 carrots
  • 2 cloves of garlic
  • 1 bunch of green onions
  • 1 slice of bread
  • 2 tablespoons olive oil
  • salt
  • black pepper
  • thyme
  • For the sauce: 1 small cucumber
  • 80 g raw peeled almonds
  • 3 tablespoons olive oil
  • 1 clove of garlic
  • juice of 1/2 lemon
Preparation
  1. Soak the beans in water with 2 sprigs of thyme and cook for 45 minutes until soft.
  2. Sauté the carrots and onions until golden.
  3. Drain the beans and blend the bread in a blender.
  4. Mix the bean puree with the sautéed vegetables, garlic, bread, and thyme, and season with salt and pepper.
  5. Shape the mixture into patties and place them on a baking tray lined with parchment paper brushed with olive oil.
  6. Bake the patties at 160 degrees Celsius for about 15 minutes.
