Ingredients
  • red beans (cooked or canned) – 400 g
  • black beans – 400 g
  • tomatoes (canned) – 400 g
  • onion – 1 pc
  • garlic – 3 cloves
  • red bell pepper – 1 pc
  • carrot – 1 pc
  • corn – 150 g
  • tomato paste – 2 tbsp
  • olive oil – 2 tbsp
  • cumin – 1 tsp
  • smoked paprika – 1 tsp
  • hot pepper – 1/2 tsp (optional)
  • salt – 1 tsp
  • black pepper – 1/2 tsp
  • water or vegetable broth – 300 ml
Preparation
  1. Heat the olive oil in a pot and sauté the chopped onion and garlic.
  2. Add the carrot and bell pepper and cook for 3–4 minutes.
  3. Stir in the tomato paste briefly.
  4. Add the tomatoes, both types of beans, and corn.
  5. Season with cumin, smoked paprika, hot pepper, salt, and black pepper.
  6. Pour in the broth and let simmer for 20–25 minutes.
  7. Stir occasionally until thickened. Serve warm.
