Ingredients
  • 1 whole turkey (3.5 kg)
  • 100 g butter
  • 1 mandarin
  • half a lemon
  • sprigs of fresh rosemary and thyme
  • salt
  • black pepper
  • 1 carrot
  • 1 onion
Preparation
  1. Mix the butter with some of the fresh herbs, finely chopping the rosemary.
  2. Rub the turkey inside and out with salt and black pepper, creating pockets between the meat and skin using a spoon.
  3. Fill the pockets with the seasoned butter and place the remaining butter inside and on top of the turkey.
  4. Let the turkey rest at room temperature, ideally overnight or at least one hour before roasting.
  5. Place the remaining herbs and chopped fruits inside the turkey, along with chopped carrot and onion in a deep baking tray.
  6. Add a little water, cover with foil, and roast for 40 minutes per kg at 180°C.
  7. After about 2 hours and 30 minutes, remove the foil and roast until golden brown, resting the turkey for at least an hour before serving.
