Avocado with Eggs and Bacon

Ingredients
  • avocado – 2 pcs
  • eggs – 4 pcs
  • bacon – 120 g
  • olive oil – 1 tbsp
  • salt – 1/2 tsp
  • black pepper – 1/3 tsp
  • chili flakes – pinch (optional)
  • parsley – 1/2 bunch
Preparation
  1. Preheat the oven to 180°C.
  2. Cut the avocado in half and remove the pit.
  3. Scoop out a little to fit the egg.
  4. Crack one egg into each half.
  5. Season with salt and pepper.
  6. Bake for about 12–15 minutes until done.
  7. Meanwhile, fry the bacon until crispy.
  8. Serve the avocado topped with bacon and sprinkle with parsley and chili if desired.
