Ingredients
  • 250 g sushi rice
  • 375 ml water
  • 3 tablespoons rice vinegar
  • 1 tablespoon mirin
  • 1 teaspoon salt
  • 2 teaspoons cane sugar
Preparation
  1. Rinse the rice until the water runs clear.
  2. Cook the rice with 375 ml of water and let it steam covered for 15 minutes on the lowest heat.
  3. Remove from heat and let it sit for another 15 minutes.
  4. Combine rice vinegar, mirin, salt, and cane sugar in a saucepan over medium heat until dissolved, then let cool.
  5. Pour the mixture over the rice, cover with a damp cloth, and refrigerate.
  6. Once cooled, the rice can be used to make sushi.
