Preparation
Blend the cauliflower until it resembles rice.
Cut the chicken into small pieces.
Heat a pan with olive oil and sauté the chicken until golden.
Add the garlic and chopped vegetables, and cook for 3-4 minutes.
Stir in the cauliflower 'rice' and cook for another 5-7 minutes.
Add soy sauce, salt, and pepper. Sprinkle with green onion and serve.
