Preparation
Rinse the quinoa and cook according to instructions.
Let it cool.
Chop the cucumber and cherry tomatoes.
Peel and dice the avocado.
Combine all ingredients in a bowl.
Add parsley, drizzle with olive oil and lemon juice.
Season with salt and pepper, mix well, and serve.
