Ingredients
  • quinoa – 150 g
  • cucumber – 1 pc
  • cherry tomatoes – 150 g
  • avocado – 1 pc
  • parsley – 1 tbsp
  • olive oil – 2 tbsp
  • lemon juice – 1 tbsp
  • salt – 1/2 tsp
  • black pepper – 1/2 tsp
Preparation
  1. Rinse the quinoa and cook according to instructions.
  2. Let it cool.
  3. Chop the cucumber and cherry tomatoes.
  4. Peel and dice the avocado.
  5. Combine all ingredients in a bowl.
  6. Add parsley, drizzle with olive oil and lemon juice.
  7. Season with salt and pepper, mix well, and serve.
