Cheesecake with Raisins, Walnuts, and Cherry Jam

Ingredients
  • 50ml milk
  • 5/6 tbsp melted butter
  • 250g biscuits
  • 50/70g raisins
  • 50/70g walnuts
  • 800g cottage cheese
  • 350g mascarpone
  • 250g whipped cream
  • 4/5 tbsp powdered sugar
  • 2 gelatin sheets
  • 200g cherry jam
Preparation
  1. Crush the biscuits and walnuts in a blender, then add the raisins, milk, and butter.
  2. Form a base and place it in the refrigerator to set while preparing the cream.
  3. Beat the cottage cheese with powdered sugar, then add the mascarpone.
  4. Gently fold in the whipped cream and gelatin according to package instructions.
  5. Let it set in the refrigerator for a few hours and then top with cherry jam.
