In a bowl, beat 2 eggs with 1 cup of powdered sugar until fluffy. Add 1 cup of oil and 1/2 cup of honey and mix well.
In 1 cup of flour, add 1 tsp. of baking soda and 2 tsp. of cinnamon. Mix and add to the egg mixture, stirring well.
Gradually add the remaining flour (about 600 g) until the dough no longer sticks to your hands. Wrap the dough in cling film and refrigerate for half an hour.
Roll out the dough and cut out gingerbread men shapes. Place them on a baking tray lined with parchment paper and bake in a preheated oven at 170 degrees for 7-8 minutes. Let them cool completely.
For the icing, combine 500 g of sifted powdered sugar, 2 egg whites, 2 tsp. of cornstarch, and 2 vanillas in a bowl. Beat on low speed for 3 minutes, then add 2 tsp. of fresh lemon juice and beat for another minute.
Cover the icing with a damp kitchen towel and refrigerate for half an hour. Divide into bowls for coloring, decorate the gingerbread men, and let the icing set.
