Stuffed Peppers with Quinoa

150 g quinoa

300 ml vegetable broth

1 onion

2 tbsp olive oil

1 tsp salt

1 tsp black pepper

100 g tomatoes (canned)

50 g cheese (optional)
Preparation
Wash and cut the tops off the peppers.
Cook the quinoa in the vegetable broth for 15 minutes.
Chop the onion and sauté it in olive oil until golden.
Add the canned tomatoes and spices to the onion.
Mix the quinoa with the onion and tomatoes.
Stuff the peppers with the mixture.
Bake in a preheated oven at 180°C for 30 minutes.
Serve topped with crumbled cheese.
