Halloumi with Vegetables

Ingredients
  • halloumi – 400 g
  • zucchini – 1 pc
  • bell pepper – 1 pc
  • eggplant – 1 pc
  • cherry tomatoes – 200 g
  • olive oil – 3 tbsp
  • lemon juice – 1 tbsp
  • salt – 1/2 tsp
  • black pepper – 1/3 tsp
  • oregano – 1 tsp
Preparation
  1. Slice the halloumi.
  2. Chop the vegetables into large pieces.
  3. Heat a pan or grill pan with olive oil.
  4. Grill the halloumi for 2–3 minutes on each side until golden.
  5. In the same pan, grill the vegetables until softened.
  6. Season with salt, pepper, and oregano.
  7. Drizzle with lemon juice, arrange halloumi with vegetables, and serve.
