Lentil Bolognese

Ingredients
  • lentils – 250 g
  • canned tomatoes – 400 g
  • carrot – 1 piece
  • onion – 1 piece
  • garlic – 2 cloves
  • tomato paste – 2 tbsp
  • olive oil – 2 tbsp
  • oregano – 1 tsp
  • basil – 1 tsp
  • salt – 1 tsp
  • black pepper – 1/2 tsp
  • water or vegetable broth – 500 ml
  • pasta (optional) – 300 g
Preparation
  1. Rinse the lentils and cook for about 15–20 minutes until semi-cooked.
  2. In a pan, heat the olive oil and sauté the chopped onion, garlic, and carrot.
  3. Add the tomato paste and stir for 1–2 minutes.
  4. Add the canned tomatoes and spices.
  5. Add the cooked lentils and pour in the broth.
  6. Let it simmer for 15–20 minutes until the sauce thickens.
  7. Meanwhile, cook the pasta according to the instructions.
  8. Serve the sauce over the pasta and sprinkle with fresh basil.
