Preparation
Preheat the oven to 180°C.
Blend the oats into flour.
In a bowl, whisk the eggs with the honey and peanut butter.
Add the oat flour, protein, baking powder, and vanilla.
Mix until a thick dough forms.
Fold in pieces of dark chocolate.
Shape cookies on a baking sheet lined with parchment paper.
Bake for about 10–12 minutes until golden.
