Rice with Peas and Porcini

Ingredients
  • 450 g frozen peas
  • 35 g dried porcini (alternative 250 g mushrooms)
  • 1 cup rice
  • 1 onion
  • 1/2 bunch parsley
  • 1 cube broth of choice
  • black pepper
  • salt
  • olive oil
Preparation
  1. Soak the porcini in warm water.
  2. Peel and finely chop the onion and parsley.
  3. Sauté the onion in heated oil.
  4. Add the peas and porcini after the onion softens. Add 3 cups of water.
  5. Season with black pepper, salt, and the crumbled broth cube.
  6. Simmer, stirring often, until the rice absorbs all the water and the peas soften. If needed, add more water. Sprinkle with parsley and serve.
