Ingredients
  • avocado – 2 pcs
  • eggs – 4 pcs
  • whole grain bread (optional) – 4 slices
  • cherry tomatoes – 150 g
  • olive oil – 1 tbsp
  • lemon juice – 1 tbsp
  • salt – 1/2 tsp
  • black pepper – 1/3 tsp
  • chili flakes – pinch (optional)
Preparation
  1. Cut the avocado in half and remove the pit.
  2. Scoop out a little if needed to fit the egg.
  3. Crack one egg into each half.
  4. Season with salt and pepper.
  5. Bake in the oven at 180°C for about 12–15 minutes.
  6. Serve with cherry tomatoes and optionally on bread.
  7. Drizzle with a little olive oil and lemon juice.
