Ingredients
  • 800 g beef tripe
  • water
  • salt
  • bay leaves
  • black peppercorns
  • 1 cup oil
  • 2 tbsp paprika
  • 1 egg
  • 1 cup yogurt
  • vinegar
  • garlic
  • 2-3 tbsp flour
Preparation
  1. Boil the tripe in water with whole black peppercorns (10), 5-6 bay leaves, and salt. Rinse and chop it.
  2. In a new pot, bring 2 liters of water to a boil, add salt to taste, 5 bay leaves, and 10 black peppercorns.
  3. In a bowl, mix 2-3 tbsp flour with 1 egg, 1 cup yogurt, and 3 drops of vinegar, then add to the boiling water (off the heat).
  4. Return to heat, stirring continuously until thickened (consistency of a drink). Turn off and add the chopped tripe.
  5. In a pan, heat the oil with paprika and strain it over the soup.
  6. Add vinegar and garlic when serving, along with hot pepper (dried ground).
