Grape Leaves Stuffed with Rice and Minced Meat

Ingredients
  • 1 jar of grape leaves
  • 300 g minced meat (beef and pork mix)
  • 120 g rice
  • 1 onion
  • 2 tbsp oil or olive oil
  • 1 carrot (optional)
  • 2 tbsp tomato paste
  • 500 ml water or broth
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • salt to taste
  • fresh dill or parsley
  • lemon for serving
Preparation
  1. Wash the grape leaves; if too salty, soak them in cold water for 10–15 minutes.
  2. Chop the onion and carrot finely. Sauté them in oil for 3–4 minutes.
  3. Add the minced meat and stir until it crumbles.
  4. Add the rice, tomato paste, and spices. Stir for 2 minutes.
  5. Pour in about 150 ml of water and cook until the rice absorbs the liquid. Add chopped dill.
  6. Take a grape leaf, place a little filling, and roll tightly into a small wrap.
  7. Arrange the wraps tightly in a pot. Pour over the remaining water or broth. Cover with a plate to prevent unrolling.
  8. Cook on low heat for about 40–50 minutes. Serve with yogurt and lemon.
