Baked Salmon with Asparagus and Sweet Potato

Ingredients
  • 400 g salmon
  • 200 g asparagus
  • 300 g sweet potato
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 lemon
Preparation
  1. Preheat the oven to 200°C.
  2. Peel and cube the sweet potato.
  3. Place the sweet potato in a baking dish and drizzle with 1 tbsp olive oil, salt, and black pepper.
  4. Bake the sweet potato for 20 minutes.
  5. Add the salmon and asparagus to the dish.
  6. Drizzle with the remaining olive oil and lemon juice.
  7. Bake for another 15-20 minutes until the salmon is cooked through.
  8. Serve warm.
