Place them in a pan with a little olive oil to sauté.
While the vegetables are cooking, soak the couscous in boiling water in a 1:1 ratio. Cover and let it sit.
Once the vegetables are ready, about 15-20 minutes, serve them. Personally, I create a bed of couscous and top it with the vegetables. Alternatively, you can mix everything and serve it as a couscous salad. It's up to your preference.
