Ingredients
  • 1 cup couscous
  • 2 zucchini
  • 1 red bell pepper
  • 1/2 leek
  • cumin
  • turmeric
  • black pepper
  • oregano
  • olive oil
  • salt
Preparation
  1. Clean and chop the vegetables.
  2. Place them in a pan with a little olive oil to sauté.
  3. While the vegetables are cooking, soak the couscous in boiling water in a 1:1 ratio. Cover and let it sit.
  4. Once the vegetables are ready, about 15-20 minutes, serve them. Personally, I create a bed of couscous and top it with the vegetables. Alternatively, you can mix everything and serve it as a couscous salad. It's up to your preference.
