Bean Burrito with Avocado and Salsa

Ingredients
  • 200 g black beans
  • cooked
  • 100 g rice
  • 1 ripe avocado
  • 100 g tomatoes
  • diced
  • 50 g onion
  • 1 clove garlic
  • chopped
  • 1 tsp cumin
  • 4 large tortillas
  • 1 tbsp olive oil
  • salt and pepper to taste
Preparation
  1. Heat olive oil in a pan and sauté onion and garlic.
  2. Add black beans, rice, cumin, salt, and pepper, and mix well.
  3. Halve the avocado, remove the pit, scoop out the flesh, and mash it.
  4. Warm the tortillas slightly and spread the bean mixture on them.
  5. Top with mashed avocado and diced tomatoes.
  6. Roll up the tortillas and serve.
