Prepare the spice mix by combining all ingredients in a bowl and mixing well. Store in a jar for weeks.
For the sauce, bring orange juice, Worcestershire sauce, whiskey, and brown sugar to a boil, then simmer for 15-20 minutes until reduced by half. Add remaining ingredients and simmer again.
Remove the silver skin from the ribs carefully. Rub the spice mix onto the ribs, ensuring it's well coated on both sides.
Wrap the ribs in foil and refrigerate for at least 12 hours. Before cooking, rewrap in aluminum foil.
Preheat the BBQ or oven to 120 °C. Cook the ribs in foil for 4 hours, then unwrap and bake for another 30 minutes, glazing with sauce every 15 minutes.
