Oatmeal Cookies with Okara and Raisins

Ingredients
  • 500g okara (soy pulp)
  • 200g brown sugar
  • 5g cinnamon
  • 150g honey
  • 100g fine rolled oats
  • 230g whole wheat flour
  • 10g baking powder
  • 10g chia seeds
  • 1 tsp baking soda
  • 50g coconut flakes
  • 100g coconut oil
  • 50g golden raisins
  • 100ml soy milk
Preparation
  1. Note: Okara is the soy pulp left after making soy milk from raw soybeans.
  2. Mix all dry ingredients together.
  3. Add okara, coconut oil, honey, and raisins to the dry mixture.
  4. Mix everything by hand until well combined.
  5. Form balls of about 40-50g and place them on a baking tray lined with parchment paper, pressing them slightly.
  6. Sprinkle lightly with fine rolled oats and bake for 15 minutes at 180 degrees Celsius with fan.
