Buddha Bowl Quinoa

Ingredients
  • quinoa – 200 g
  • chickpeas (cooked) – 300 g
  • avocado – 2 pcs
  • carrot – 2 pcs
  • cucumber – 1 pc
  • red cabbage – 150 g
  • cherry tomatoes – 200 g
  • spinach or green salad – 100 g
  • olive oil – 3 tbsp
  • lemon juice – 2 tbsp
  • tahini – 2 tbsp
  • salt – 1 tsp
  • black pepper – 1/2 tsp
Preparation
  1. Rinse the quinoa and cook it in a 1:2 water ratio for about 15 minutes.
  2. Drain and let it cool slightly.
  3. Prepare the vegetables – grate the carrot, chop the cucumber, tomatoes, and avocado.
  4. In a bowl, layer: quinoa → chickpeas → vegetables → greens.
  5. In a small bowl, mix tahini, lemon juice, olive oil, salt, and pepper.
  6. Drizzle the sauce over the bowl and serve.
