Cream Soup with Pumpkin, Curry, and Pumpkin Seeds

Ingredients
  • 800 g pumpkin
  • 1 onion
  • 1 potato
  • 1 yellow bell pepper
  • 1 carrot
  • 100 g butter
  • 1 tsp salt
  • 1 pinch black pepper
  • 1 tsp curry
  • 50 g roasted pumpkin seeds
  • cream
  • 2 slices of bread (middle part
  • without crusts)
Preparation
  1. Peel the pumpkin and cut it into cubes, then roughly chop the remaining vegetables - onion, potato, yellow bell pepper, and carrot.
  2. Cook the vegetable mix until soft, adding salt, black pepper, and curry at the beginning.
  3. Carefully blend with an immersion blender.
  4. Add butter and serve optionally with a sprig of mint, a spoonful of cream or yogurt.
  5. Sprinkle with pumpkin seeds and add croutons seasoned in butter and salt. Enjoy your meal!
