Preparation
Preheat the oven to 180°C.
Chop the mushrooms and carrots, and sauté them in olive oil.
Add the spinach and tomatoes, cook until softened.
In a bowl, mix the ricotta with basil, salt, and pepper.
In a baking dish, layer lasagna, vegetable mixture, and ricotta.
Finish with mozzarella and parmesan on top.
Bake for 30 minutes.
