Ingredients
  • 200 g lasagna
  • 300 g spinach
  • 200 g mushrooms
  • 150 g carrots
  • 250 g tomatoes
  • 200 g ricotta
  • 100 g mozzarella
  • 50 g parmesan
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp basil
Preparation
  1. Preheat the oven to 180°C.
  2. Chop the mushrooms and carrots, and sauté them in olive oil.
  3. Add the spinach and tomatoes, cook until softened.
  4. In a bowl, mix the ricotta with basil, salt, and pepper.
  5. In a baking dish, layer lasagna, vegetable mixture, and ricotta.
  6. Finish with mozzarella and parmesan on top.
  7. Bake for 30 minutes.
