Mediterranean Rice with Vegetables

Ingredients
  • rice – 250 g
  • zucchini – 1 pc
  • eggplant – 1 pc
  • red bell pepper – 1 pc
  • cherry tomatoes – 200 g
  • olives – 100 g
  • garlic – 2 cloves
  • olive oil – 3 tbsp
  • lemon juice – 1 tbsp
  • oregano – 1 tsp
  • basil – 1 tsp
  • salt – 1 tsp
  • black pepper – 1/2 tsp
  • parsley – 1/2 bunch
Preparation
  1. Cook the rice according to the instructions and set aside.
  2. Dice the zucchini, eggplant, and bell pepper.
  3. Heat the olive oil in a pan and sauté the garlic briefly.
  4. Add the vegetables and cook for 8–10 minutes until softened.
  5. Stir in the cherry tomatoes and olives.
  6. Season with oregano, basil, salt, and pepper.
  7. Add the cooked rice and mix well.
  8. Drizzle with lemon juice and sprinkle with parsley. Serve warm or slightly chilled.
