Salmon with Lentils

Ingredients
  • salmon fillet – 600 g
  • lentils – 200 g
  • carrot – 1 pc
  • onion – 1 pc
  • garlic – 2 cloves
  • olive oil – 3 tbsp
  • lemon juice – 2 tbsp
  • salt – 1 tsp
  • black pepper – 1/2 tsp
  • parsley – 1/2 bunch
Preparation
  1. Cook the lentils in salted water for about 20 minutes and drain.
  2. In a pan with olive oil, sauté the onion, garlic, and grated carrot.
  3. Add the cooked lentils and stir.
  4. Season with salt, pepper, and a bit of lemon juice.
  5. Season the salmon with salt and pepper.
  6. Cook it in a pan or oven (about 10–15 minutes).
  7. Serve the salmon on top of the lentils, drizzle with lemon juice, and sprinkle with parsley.
