Preparation
  1. Heat the olive oil in a deep pot and sauté the chopped onion, garlic, carrot, and celery until softened.
  2. Add the tomatoes and cook for a few minutes, then pour in the white wine and let it reduce slightly.
  3. Pour in the fish broth, add the bay leaf, salt, and pepper, and bring to a boil.
  4. Add the fish cut into pieces and cook for about 5 minutes.
  5. Add the shrimp, mussels, and squid, and simmer for another 5–7 minutes until the seafood is cooked.
  6. Finally, sprinkle with fresh parsley and add a little lemon juice for freshness.
