black pepper – 1/2 tsp
Preparation
Heat the olive oil in a pan and sauté the chopped onion and garlic.
Add the black beans and corn.
Season with cumin, smoked paprika, salt, and pepper, and cook for 5–7 minutes.
Chop the tomatoes and avocado.
Warm the tortillas in a dry pan.
Fill them with the bean mixture.
Add tomatoes, avocado, and fresh cilantro.
Drizzle with lime juice and serve immediately.
