Spaghetti with Spinach and Tomatoes

Ingredients
  • zucchini - 1 pc.
  • tomato - 1 pc.
  • basil - 4 - 5 leaves
  • spinach - 6 - 7 leaves
  • red bell pepper - 1 pc.
  • garlic - 1 clove (optional)
  • sunflower seeds - 30 g
  • soaked
  • lemon juice - juice of 1/2 lemon
  • black pepper
  • hot peppers - to taste
Preparation
  1. Using a spiralizer, turn the zucchini into spirals. If you don't have a spiralizer, slice it into thin strips with a peeler or knife.
  2. In a blender, mix the tomato, spinach, red bell pepper, 25 g of sunflower seeds, basil, lemon juice, hot pepper, garlic, and black pepper.
  3. Add the sauce to the zucchini spaghetti.
  4. Sprinkle the remaining 5 g of seeds on top. Optionally, add an olive or a basil leaf for garnish.
