Ingredients
  • 300 g minced meat
  • 300 g potatoes
  • 50 g vermicelli or rice
  • 1-2 heads of onion
  • 1 carrot
  • 1/2 red bell pepper
  • celery
  • olive oil
  • black pepper
  • salt
  • thyme
  • oregano
  • parsley
  • for the dressing: 130 g yogurt
  • vinegar
  • 1 egg
Preparation
  1. Mix the minced meat with a pinch of thyme, salt, black pepper, and half a finely chopped onion. Form into small balls.
  2. Peel and dice the potatoes. Rinse them well.
  3. Finely chop the onion, celery, red bell pepper, and carrot, and sauté them in a pot.
  4. Once the vegetables soften, add the potatoes for a short time.
  5. Add 1.5 liters of hot water and the meatballs, then let the soup boil.
  6. Prepare the dressing by mixing the ingredients well.
  7. Once the potatoes soften, add the vermicelli/rice and stir.
