Ingredients
  • broccoli – 300 g
  • zucchini – 1 pc
  • carrot – 2 pcs
  • celery – 2 stalks
  • onion – 1 pc
  • garlic – 2 cloves
  • olive oil – 2 tbsp
  • lemon juice – 2 tbsp
  • salt – 1 tsp
  • black pepper – 1/2 tsp
  • water or vegetable broth – 1 l
  • parsley – 1/2 bunch
Preparation
  1. Heat the olive oil in a pot and lightly sauté the onion and garlic.
  2. Add the chopped carrots, celery, and zucchini.
  3. Cook for 5 minutes, stirring occasionally.
  4. Add the broccoli and pour in the broth.
  5. Let simmer for about 15–20 minutes until the vegetables are tender.
  6. Blend the soup until smooth.
  7. Add lemon juice, salt, and pepper, and sprinkle with parsley before serving.
