Ingredients
  • 1kg cauliflower
  • 1kg carrots
  • 1kg red peppers
  • 2 heads of celery
  • black pepper
  • allspice
  • mustard
  • 500ml wine vinegar
  • 150g salt
  • 250g sugar
Preparation
  1. 1. Clean and prepare the ingredients; break the cauliflower and chop the other vegetables to your desired size.
  2. 2. In a large container, add 150g salt and 250g sugar to the prepared vegetables. Mix well and let it sit for 24 hours, stirring occasionally.
  3. 3. The next day, drain the juice from the vegetables into a small pot.
  4. 4. Add 500ml wine vinegar to the juice and bring it to a boil.
  5. 5. In empty jars, place 4-5 black peppercorns, 3-4 allspice, mustard to taste, and a garlic clove if desired.
  6. 6. Fill the jars tightly with vegetables, pour the liquid evenly among them, and seal carefully.
