check_circle 120 g dark chocolate 60% (callets or finely chopped if from a block)
Preparation
Preheat the oven to 180ºC with top and bottom heat. Grease a loaf pan (30x11x7 cm) with baking spray or oil.
Melt the two types of chocolate separately in a water bath. Beat the butter with sugar and salt until light and fluffy.
Add vanilla and orange essence, then mix well. Add eggs one by one, beating well after each addition.
Combine flour with baking powder and add to the mixture. Set aside 1/3 of the batter and mix it with dark chocolate, cocoa, spice mix, and milk.
Mix the remaining 2/3 of the batter with white chocolate. Pour half of the white batter into the pan, followed by the chocolate batter, and top with the remaining white batter.
Swirl through the batter with a knife to create a marble effect. Bake for 50 minutes, checking doneness with a skewer.
For the glaze, heat cream and glucose until boiling and pour over chopped chocolate. Stir until smooth. Use immediately.
