Ingredients

4-5 bay leaves
Preparation
Fill a pot with cold water to cover the octopus, leaving 2-3 fingers of water above it. You can place a plate on top to keep it submerged.
Add black pepper, allspice, and bay leaves, then turn on the heat. It's important to add the octopus to cold water to heat gradually.
Once the water boils, reduce the heat to a simmer. Cook for about 1 hour and 15 minutes to 1 hour and 45 minutes, testing for doneness with a fork.
Remove the octopus from the water and let it cool to room temperature. You can place it in a colander to drain.
In a deep narrow container, squeeze the lemons and add olive oil in a roughly 1:1 ratio. Ensure the dressing covers the octopus evenly.
Let the octopus marinate for at least 45 minutes, but it can be left longer for more flavor.
