Spinach with Sunflower Seed 'Cream'

Ingredients
  • 300 g raw cleaned spinach
  • 1 stalk of leek
  • 5 tbsp olive oil
  • 50 g raw sunflower seeds
  • 1 tsp salt
  • 1 tsp brown sugar
  • 1 tbsp lemon juice
  • 1 cup water
Preparation
  1. Chop the leek finely and sauté in olive oil until softened.
  2. Add the spinach and cook on medium heat covered for about ten minutes.
  3. Blend the sunflower seeds, salt, sugar, lemon juice, and water until fully smooth.
  4. Add the resulting 'cream' to the spinach and let it simmer on low heat for another ten minutes.
  5. Serve with toasted slices.
