Mushroom Cream Soup

Ingredients
  • 4 tbsp butter
  • 1 tbsp oil
  • 2 onions
  • 4 cloves garlic
  • 750 g mushrooms
  • 4 tsp chopped thyme
  • 100 ml white wine
  • 6 tbsp flour
  • 1 l water
  • salt
  • black pepper
  • beef broth
  • 200 ml cooking cream
Preparation
  1. In a pan, heat the butter and oil, sauté the onions for 2-3 minutes, then add the garlic for about 1 minute.
  2. Add the chopped mushrooms and thyme, cooking for about 5 minutes.
  3. Pour in the wine and cook for another 3 minutes.
  4. Stir in the flour slowly for about 2 minutes, then add the water and mix well.
  5. Once boiling, reduce the heat, season with salt, black pepper, and add the beef broth. Simmer for 10-15 minutes until thickened.
  6. Add the cream, continuing to cook on low heat (do not boil). Blend and garnish with parsley and thyme.
