Tender Homemade Cake with Strawberries and Almonds

Ingredients
  • 240g all-purpose flour
  • 250g sugar
  • 10g baking powder
  • 5 eggs
  • 1 tsp baking soda
  • 200g yogurt
  • 190g coconut oil
  • 90g fresh or frozen strawberries
  • 40g ground almonds
  • 1 vanilla bean
  • powdered sugar for dusting
Preparation
  1. Beat the eggs with the sugar until frothy.
  2. Mix all dry ingredients and add to the egg mixture.
  3. Finally, add the fat.
  4. Grease and flour a 22cm bundt pan.
  5. Pour in the mixture, sprinkle the strawberries on top, and press them lightly to sink.
  6. Bake for about 50 minutes at 170 degrees or until a skewer inserted in the center comes out clean.
  7. Once out of the oven, turn it onto a rack to cool. Optionally dust with powdered sugar.
