1/4 head of celery

1 cup peeled and chopped pumpkin

1 onion

1 cup cauliflower florets

200 ml coconut milk

3 tbsp olive oil

1 tsp ground cumin
check_circle
1 tsp turmeric
check_circle
1/2 tsp cinnamon

1/2 tsp ground ginger
check_circle
1/2 bunch parsley
check_circle
salt to taste
Preparation
1. Peel, chop, and boil the root vegetables in salted water.
2. Blend the soup and add the coconut milk.
3. Sauté all spices briefly in olive oil until fragrant and add to the soup.
4. Serve with freshly chopped parsley and optionally - croutons.
