Carrot Cake with Coconut

Ingredients
  • 250g flour
  • 20g baking powder
  • 70g coconut flakes
  • 300g sugar
  • 100g butter
  • 200g grated carrots
  • 1 vanilla
  • 6 eggs
  • 30g oil
  • Decoration: caramelized condensed milk
  • walnuts
Preparation
  1. Mix the dry ingredients in a bowl.
  2. Beat the eggs with sugar until pale, then add butter and oil.
  3. Continue mixing until homogeneous, then add dry ingredients and finally the carrots.
  4. Grease and flour a 23cm bundt pan.
  5. Pour in the mixture and bake in a preheated oven at 160°C for 45 minutes with fan, or 180°C without.
  6. Once cooled, turn it out onto a platter, drizzle with melted caramelized condensed milk, and sprinkle with chopped walnuts.
