Quinoa Meatballs with Garlic Sauce

Ingredients
  • 200g quinoa
  • 2 eggs
  • 1 onion
  • 1 small zucchini
  • 1 tsp savory
  • 1/2 tsp thyme
  • 1/2 bunch parsley (chopped)
  • 3 tbsp breadcrumbs
  • black pepper
  • salt
  • 1 tbsp flour
  • Coconut oil for greasing the pan
  • Sauce:
  • 100g mayonnaise
  • 1 tbsp mustard
  • dill
  • 1 clove garlic
  • lemon juice
Preparation
  1. Cook the quinoa and drain well if there is excess liquid.
  2. Add flour, breadcrumbs, and spices to the quinoa and refrigerate.
  3. Grate the zucchini, salt it, and after 10-15 minutes, squeeze out the water.
  4. Finely chop the onion and sauté with the zucchini until soft.
  5. Mix everything together and form meatballs, frying them in a greased pan until golden.
  6. For the sauce, mix the mayonnaise with all ingredients and add a little water if needed.
